11 Cold Soup Recipes for When It’s Really Freakin’ Hot Out

August is almost approaching, and I am completely fed up with the heat. It was actually rather pleasant at first, especially considering that we had a particularly chilly spring this year. Nonetheless, as the days wear on, I’m not sure how much longer I’ll be able to stand the sweating and pain for. It goes without saying that everything I put in my mouth ought to be at room temperature or below. Soups served cold are the answer. You may be acquainted with gazpacho, which is a chilled soup made from a combination of vegetables such as tomatoes, onions, and peppers that is usually served cold, but the category of chilled soups includes much more than simply gazpacho.

If you want to give them a try but aren’t sure where to start, try one of these 11 recipes for inspiration.

The only drawback is that, while they are all tasty and refreshing, they do not contain enough nutrients or calories to be considered complete meals in their own right. Make sure, though, that you mix them with something else. We’d like to recommend one of these quick and easy no-cook dishes.

21 Chilled Soups That Are So Hot Right Now

Even while cold soup may seem like an oxymoron, the refreshing, spicy tastes of a chilled gazpacho prove that it is a deceptively delicious notion when done right. As a bonus, it’s a super-convenient way to get in a healthy dinner when the heat makes it difficult to roast vegetables or stand over a hot stovetop. This collection of 21 cold soups will help you make the most of your summer produce—and we’re not just talking about vegetable-centric dishes here. These souped-up compositions are unlike anything you’ll find in a can, ranging from fruity, dessert-like mixtures to substantial, bean-based selections.

1. Chilled Pea Cucumber Cashew Soup With Mint

While a thick, chunky pea soup is perfect for the winter months, the smooth texture of this rich yet refreshing soup may be attributed to a cup of blended cashews, which have been pureed with the peas. Cucumbers enhance the cooling impact of the dish, making it particularly suitable for summer.

2. Chilled Cherry Tomato Soup

Seasonal cherry tomatoes, as well as plenty of fresh garlic and basil, are used in this summery twist on a classic soup. Even though it’s cold, we’re assuming it still tastes fantastic when served with a grilled cheese sandwich.

3. Zucchini Basil Soup

If you want to do something different with your zucchini than spiralize it, try churning it into soup the next time. Miso paste offers a distinct savory flavor, while basil adds a refreshing touch as well as a vibrant green color to the dish—but, we’re not going to lie, those garlic croutons might be the most delicious part of it all.

4. Carrot Ginger Soup

First, sauté the carrots and onions in a small amount of melted butter until they are perfectly seasoned before puréeing them into a thick, soupy consistency. A smidgeon of orange zest adds a little more zing to the dish, which goes nicely with the ginger flavor.

5. Avocado Asparagus Gazpacho

First, sauté the carrots and onions in a small amount of melted butter until they are well seasoned before puréeing them into a thick soup. An additional kick is provided with a pinch of orange zest, which pairs nicely with the ginger.

6. Chilled Watercress and Potato Soup With Dill

When served hot, potato soup might be heavy, but when served cold, it is really rather pleasant. Peppery watercress contributes even more flavor to the dish by providing a spicy kick.

7. Chilled Cauliflower and Yogurt Soup

Rather than your usual breakfast yogurt bowl, try this yogurt-based soup to satisfy your daily dairy requirement instead. It manages to incorporate both a vegetable and a fruit into one dish by including cauliflower and—wait for it—a Granny Smith apple for a mild and sweet flavor. Curry powder, on the other hand, gives the dish an Indian flavor. It all sounds a little out of the ordinary, but that’s precisely why you’ll enjoy it.

8. Rustic Vichyssoise

Instead of your usual breakfast yogurt bowl, try this yogurt-based soup to get your dairy fix. A Granny Smith apple, which has a mellow and sweet flavor, is used to make this dish, which incorporates both vegetables and fruits into one dish.

Curry powder, on the other hand, gives the dish an Indian flair. Everything appears to be out of the ordinary at first glance, which is precisely why you’ll appreciate it.

9. Chilled Pineapple Soup

The combination of coconut and pineapple is a classic, but when you add bell peppers, onion, and cilantro to the mix, it takes on an all new level of deliciousness. This dish, whether it’s a soup or a savory pia colada, is certain to leave you feeling pleased.

10. Chilled Cherry Soup With Cardamom

With the flavors of cardamom, cinnamon, and lemon juice added to this sweet and tart cherry soup, it might be served as a nutritious dessert. The sour cream provides the creaminess, but the writer points out that yogurt would work just as well if that’s more your style.

11. Chilled Melon and Almond Soup

While the savory flavors of the ground almonds, garlic, and salt dominate this soup, melon (cantaloupe is a popular choice) offers a delicate sweetness to balance it out. This cocktail is quite visually appealing when served to guests, thanks to the olive oil swirl and paprika-dusted melon skewers as decorations on top of each cooled glass.

12. Chilled Blueberry Soup

Want to put those farmer’s market blueberries to good use in something a little less calorie-dense than pie? Try this recipe. Instead, make a soup out of them. It has the flavor of pie filling, thanks to the addition of cinnamon and ginger. However, it has far less sugar.

13. Chilled Tomato and Peach Soup With Ginger

This isn’t your typical tomato soup, though. Along with the peaches, this dish has a hefty two teaspoons of ginger, guaranteeing that it is far from boring.

14. Easy Watermelon Gazpacho

The basis of this famous chilled soup is made up of watermelon, tomatoes, and other fresh ingredients. The rest of the ingredients are the same as they would be in a typical gazpacho, but it’s remarkable how much of a difference one small change can make in terms of flavor.

15. Cantaloupe Peach Soup With Blackberry Drizzle

This delectable combination has not one, not two, but three summer fruits that have been puréed together. You could certainly call it a smoothie, but the blackberry-balsamic drizzle and fresh mint garnish give it the appearance of a traditional soup in the end.

16. Chilled Edamame Gazpacho With Roasted Corn and Curried Salt

Aside from its appearance (the yellow and green color combination will grab anyone’s attention! ), this vegan soup has everything going for it: flavor (thanks to the fresh basil), nutrition (excellent protein from the beans and healthy fats from the avocado), and just the right amount of zing (courtesy of a pinch of garam masala).

17. Chilled Hummus Soup

The following recipe is perfect for those of you who, like us, have been known to gobble hummus by the spoonful. It tastes just like the original bean dip, thanks to the addition of tahini, cumin, and garlic, but it’s been soupified to the point where it’s entirely suitable as a major meal.

18. Spicy White Bean and Corn Gazpacho

Corn soup doesn’t necessarily have to be a hearty stew with lots of vegetables. Consider making chilled gazpacho, in which yellow tomatoes, bell peppers, and delicious olive oil are the perfect complements to the warm weather. This smooth form as opposed to the typically chunky variety is due to the high protein content of the white beans.

19. English Pea, Fava Bean, and Mint Soup

Using peas, fava beans, and mint together makes for a delicious meal.

Take advantage of them in soup form with this super-easy dish that calls for less than five ingredients. There’s just a small amount of cream in this recipe, and it goes a long way, but you may use ordinary milk if you like.

20. Cold Lentil Yogurt Soup

Based on a South Asian yogurt and lentil soup that is typically served with rice, this version maintains some of the classic tastes while using a far shorter ingredient list and an easier one-step preparation technique than the original recipe calls for. It’s also a terrific vegetarian method to get a lot of protein into your diet without eating meat.

21. Chilled White Bean, Cucumber, Mint, and Yogurt Soup

The fact that this refreshing Mediterranean-inspired soup comes together in only five minutes is testament to the fact that it is a straightforward process of mixing ingredients together—no cooking is necessary. Pistachios are sprinkled on top of the velvety mixture to provide a crunchy contrast to the smooth texture.

Chill Out With Cold Soups This Summer

There are a plethora of cold soups to choose from this summer, and while gazpacho is arguably the most well-known, there are countless more to try. Using a blender, make these three dishes that are not only nutrient-dense but also serve as a refreshing alternative to salad when you’re looking to get in a serving or two of vegetables on a hot day. They’re also quick and easy to make. Each of these dishes has its own set of health benefits as well as its own distinct flavor profile. There are several health benefits to including protein in your soups; here are ten delicious and healthy soup recipes to get you started on your way to better health.

Opting for soup makes it easy to incorporate plant-based protein into your meals.

A steaming cup of hot soup is hard to top when it comes to a warming, feel-good cuisine. And if you’re seeking the type of substantial, delicious soup that can be eaten as a meal in and of itself, you’ll want to make sure to include a critical nutrient: protein. The addition of protein to soup, particularly when mixed with carbs and good fats, increases meal pleasure, according to RDN Rachel Helfferich, who also works as a yoga instructor in Indianapolis. “If your soup is lacking in protein, you may find yourself feeling hungry even after you have finished eating.” Which begs the question: how much protein should you strive for in a cup of soup?

  • According to the United States Department of Agriculture, adding shaved Parmigiano-Reggianocheese, but just 1 12 ounce (oz) to keep calories and saturated fat down; a tablespoon of nutritional yeast powder; or a slice of higher-protein bread can boost the amount of protein in any soup (USDA).

  • Aside from fish, legumes, nuts, and seeds, she recommends including protein into your diet from a range of different sources.
  • “Plants may also be a great source of nutrients for you,” says Ginger Hultin, RDN, a registered dietitian in Seattle who is also the author of Anti-Inflammatory Diet Meal Prep.
  • Not only are the soups in this collection healthful and filling, but they also include at least 12 g of lean protein each serving!

An Easy Way To Reduce Fat While Cooking

Chef Daniel Green demonstrates how to reduce fat consumption in your cooking with this simple culinary tip. It’s easy to create this chili dish from Two Peas and Their Pod, and it’s also packed with protein. Rotisserie chicken and chicken broth, lime juice, jalapeño slices, onion, garlic, and green chiles are all used to flavor the soup, which also contains herbs and spices (such as cumin, chili powder, and cilantro). “The white beans in this dish are an added benefit since they help to improve the protein content while also providing fiber and antioxidants,” Hultin explains.

Contains 327 calories, 28 g of protein, 35 g of carbohydrates, 8 g of fat (1 g of saturated fat), and 8 g of fiber in a single serving (one-quarter of the whole recipe).

Chickpeas, a plant-based protein source, are paired with stomach-filling vegetables such as butternut squash, onion, garlic, carrots, tomatoes, and fresh baby spinach to create a hearty and satisfying dish.

As Hultin points out, “the recipe asks for a yogurt garnish, which will add even more protein and taste to it.” It is possible to use a dairy-based yogurt, such as Greek yogurt, or a plant-based yogurt that contains soy or almonds, according to her.

12 cups of cooked lentils have 303 calories, 12 grams of lean meat and 42 grams of carbohydrate. There are also 12 grams of fat (1 gram of saturated fat) and 5 grams of fiber in one meal (around 1 12 cups). IN CONNECTION WITH: 15 Recipes to Help You Strengthen Your Immune System2716

Chicken Sweet Potato Taco Chowder

Because of the chicken breast and bone brothcollagen in this dish from Kim’s Cravings, it has a substantial amount of protein. “Amino acids, which are the building blocks of protein, are used to make collagen,” Hultin explains. In fact, only one cup of this soup has 16 g of protein as a result of this.” Also included are corn, diced tomatoes, green chiles, black beans, and a flavorful assortment of spices, including garlic powder, cumin, chili pepper powder, and paprika. This chowder has a wonderful creamy texture, which is made possible by the addition of mashed sweet potatoes.

Vegan Red Lentil Soup

It is not necessary to adopt a vegan diet in order to have a tasty vegan soup. This spicy red lentil soup from Bakerita is a good example of what I’m talking about. Lentils are a legume that is high in protein, according to Hultin. They also include a significant amount of fiber and antioxidants. In addition to spinach, fresh garlic and ginger, and fragrant spices such as turmeric and cumin, this dish contains a variety of vegetables. Consider adding some more broth and a Greek yogurt topping to this soup since it is lower in calories, according to Jones; you will feel fuller for longer periods of time and will be less tempted to snack between meals.

In addition to the potatoes (Yukon, baby red, or white), the stew adds an onion, garlic, tomatoes, and a fragrant saffron-infused stock.
