You may even buy the Cashew Cookie taste as well. I appreciate that they are created only from whole foods and are quite easy. However, when I opened several of the cashew cookie bars last week, I discovered that they were moldy. Even so, I decided I’d give them a break because their “best by” date was four months earlier.

Oops.

However, I recently opened a blueberry muffin bar that was only 10 days over its “best by” date and saw that the end had been coated with mold.

Because the wrapper does not state “eat before this date,” it just states that it is best if consumed by this date, which leads me to believe we have a packing issue or something.

I don’t believe I can put my trust in them anymore.

To be clear, I am not blaming the vendor for delivering us outdated products because I have other shipments with “best by” dates that are more recent.

My beef is that even if most other food that is stored on a shelf has passed its “best by” date, it is still perfectly edible after only 10 days.

Since General Mills acquired Small Planet Foods and began manufacturing Larabars, the company has begun covering the bars with a slimy material to prevent the bars from clinging to the wrapper while in transit.

We use these frequently on treks or travel when we know we will be able to eat something wholesome.

Besides, it’s hardly a good deal if we have to throw some (or many) of them away because of a mistake.

When I opened the newer boxes, I believe the older ones were shuffled back into their original positions.

Seeing the remarks concerning the age of the food also prompted me to check the box again, despite the fact that I’d previously eaten several of them and they were all delicious.

In other words, if something suspicious has occurred during the packaging process that has resulted in some of these negative evaluations, it has most likely been addressed or is limited to a single distribution facility.

There will be no pranks here.

I will never make another purchase.

There is one limitation with this flavor, and that is that it is dependent on the weather.

These are all REAL foods, not preservatives or things that you can’t even begin to pronounce, let alone understand what they are. The level of illness and obesity in the United States is incredible; perhaps if people were more aware of what and how much they were consuming, they would be in better health.

Despite the fact that they contain 17 grams of sugar, there are no grams of “added sugar.” It is the natural sugar in these fruits that I consider to be far healthier and more appropriate to ingest than all of the added sugar found in candy, cookies, fast food, and other processed foods.

Most Larabars have five components, and I’m continuously astonished at how they manage to achieve what they do by using dates as the major ingredient in this particular bar.

In really hot weather (over 80-85 degrees), they may not travel properly.

Then I put them in the fridge for a few hours and they recover, but they do become a little gritty as a result.

  10. HA HA HA HA HA HA The cost of getting one for everyone in my family would be about ten dollars, which is too expensive.

Is it really worth ten bucks for a snack? This is not going to happen. After learning all of this, I would have been the last person I would have expected to be the one who mastered the art of making a homemade energy bar! Here’s how it all went down.

Energy Bar Recipe

I ended up with a number of dates that were reaching the end of their usefulness for some reason or another. A long back, I recalled my step-mother cooking raw cookies, and I figured I’d give it a shot myself. Literally. Because they’re created in a food processor, they’re quick and easy. Ba-dum-bum. I’ll be here for the rest of the week, guys. The piano has a tip jar on the bench. After that, it was just a matter of time until the dates were transformed into chocolate chips and almonds. By the time I realized it, I was squeezing an unappealing but delectable paste into a parchment-lined baking sheet and shoving the whole thing into the refrigerator to harden up.

I closed my eyes for a moment, and when I opened them again, the cutting board had been reduced to mere crumbs, and I found myself surrounded by a group of big-eyed, finger-licking, hollow-legged, teen and pre-teen boys, who were not-so-innocently inquiring as to whether or not I had a second pan of my larabar recipe hidden somewhere in that refrigerator.

  1. Because I had anticipated this possibility, I divided the mixture into three different pans, but I wasn’t going to tell THEM about it.
  2. I wished it could have lasted longer than a day.
  3. One seller said, “These taste just like Snickers bars,” as the adults devoured the bars in the same manner that my children did.
  4. So, where does the Larabar from the title of the dish fit into all of this, exactly?
  5. When I informed her that it was a basis of ground dates, she cried, “OH!
  6. And it’s at this point that I take responsibility for the first two reasons I avoided energy bars.
  7. What if you could get something cheap, tasty, and healthy?
  8. Count me among those who have been won over.
  9. 1.

Make your own larabars and store them in a sandwich bag in your jacket pocket to keep you fueled for long fall walks or treks, or just to snack on when you’re feeling hungry. With the exception of a little dark chocolate, the ingredients are mostly fruits and nuts. I don’t see how you can lose.

Larabar Recipe

When selecting dates for your homemade larabars, be sure to select ones that are moist rather than too dry in texture. This improves the texture quality of the finished bars, as well as making it simpler for your food processor to blend the entire shebang together in the first place. The option of whether to use raw or roasted almonds in your larabar recipe is entirely up to you. My favorite way to eat them is toasted because it adds a little additional nuttiness, but my husband loves them raw.

I use whichever natural nut butter we happen to have on hand – most commonly peanut butter – but sunflower butter, almond butter, and peanut butter all work just as well as the peanut butter.

Use these to make Homemade Larabars

  • The following items are required: food processor
  • Chef’s knife
  • Parchment paper
  • 9×13 baking sheet.

Homemade Larabars

A sheet of parchment paper should be used to line a 9×13 inch pan with enough paper to hang over the long sides to form a border. Make a mental note to put it away. Equip a food processor with a metal blade to process the ingredients. Pulse the almonds until they are consistently finely chopped in the processor until they are finely chopped (think fresh bread crumb texture.) Add in the chocolate chips and pulse until the chocolate chips are finely chopped as well as the rest of the ingredients.

  • Mix in half of the dates until a paste forms in the food processor and clumps together in the workbowl, about 30 seconds.
  • Replace the cover and process until the ingredients are equally distributed.
  • Repeat with the remaining dates, chocolaty nuts, and nut butter until all ingredients are used.
  • The extra parchment should be folded over the bars to cover them, and a flat and heavy object should be used to push down firmly on the mixture until it is completely smooth.

To slice:

Transfer the now-firm bars from the pan to a big cutting board by slinging the excess parchment paper around your wrists and shoulders. Cut into preferred size squares (I prefer 30 squares) and keep in the refrigerator in a jar with a tight-fitting lid. A bar that has not been refrigerated will keep for 48 hours if kept covered and at room temperature.

Transfer the now-firm bars from the pan to a large cutting board by slinging the excess parchment paper around them. Cut into preferred shapes (I prefer 30 squares) and place in a firmly closed container in the refrigerator. If kept covered and at room temperature, an unrefrigerated bar will last for 48 hours.

Cut into preferred shapes (I prefer 30 squares) and keep in the refrigerator in a jar with a tight-fitting lid. A bar that has not been refrigerated will keep for 48 hours if it is kept covered and at room temperature.

  • Repeat with the remaining dates, chocolaty nuts, and nut butter until all ingredients are used. When all of the ingredients have been processed in this manner, moisten your hands and press the mixture into the bottom of the pan as evenly as you can with them. Plaintiff Barbara Evans has filed a Larabar ingredient class action lawsuit against Small Planet Foods Inc., the company that manufactures Larabar, on behalf of the general public. She claims that the corporation deliberately misrepresents its goods as being healthful and low in sugar, and that this is done on purpose.

According to the Larabar class action lawsuit, Small Planet Foods purposefully markets Larabars as containing just fruit and nuts in order to capitalize on customers’ predilection for natural foods by marketing Larabars as such.

The Larabar class action complaint further claims that customers recognize items as “natural” in part if they have a limited number of ingredients mentioned on the label, because this has been connected with products being created from identifiable and not synthetic substances.

As reported by the Associated Press, dates account for a significant portion of what is described as “fruit” in the ingredient list.

Specifically, the Larabar ingredients class action lawsuit claims that when consumers choose products that contain fruit rather than candy, or products that contain fruit but do not contain a lot of extra sweeteners, they are assuming that the product will contain a low amount of sugar and will be beneficial to their health.

I managed to sneak away to Atlanta for a magazine convention last week. And, for once, I thought ahead and packed a few extra snacks for my journey. They supplied sustenance in the mornings when breakfast ten floors below seemed so far away, and they kept me calm when our flight home was diverted from Chicago to Indianapolis around dinnertime due to a surprise diversion from Chicago to Indianapolis due to weather. Eating healthily and frequently has become so engrained in my daily routine that I forget how important it is until I am away from home for a few days and have to remind myself.

  1. Meals skipped, simple carbohydrates consumed, and junk food consumed transform me into a wobbly, unhappy, muttering mess.
  2. Hunger causes me to be at my worst, while well-fed causes me to be at my most joyous best.
  3. I had my first Larabar early this year, so I won’t presume that you haven’t had the pleasure of trying one as well.
  4. Because of their limited ingredient list, they are surprisingly tasty for a packaged product.
  5. Curiosity got the better of me (see also: being cheap), and it didn’t take long for me to experiment with producing them myself.
  6. My knowledge of Larabar tastes is limited, but I have eaten some of my husband’s favorite kinds, such as cherry pie and apple pie, which I think are both delicious.
  7. A couple of Larabars’ ingeniously titled date and nut combinations, such as the cashew cookie and pecan pie, have also been tried, although they aren’t my favorites.
  8. Rather than dried cherries, I used dried apricots to liven up the fruit mixture in this batch because they are more economical per ounce than, say, raisins.
  9. Finally, I sprinkled a bit of sea salt on top since sea salt enhances the flavor of everything (from savory dishes to oatmeal, smoothies and chocolate desserts, try it).
  10. In addition, I believe my recipes are less expensive, especially when using organic goods.

Ingredients

  • 1 12 cup almonds (or other nuts, raw or roasted, but certainly unsalted)
  • 1 generous cup pitted Medjool dates
  • 1 generous cup toasted almonds (or other nuts, raw or roasted, but definitely unsalted)
  • 1 cup dried apricots (or other dried fruit like as cherries, cranberries, or dehydrated apples)
  • Pinch sea salt
  • (possible add-ins: tiny quantities of lemon zest, lime zest, nut butter, or cocoa powder)
  • 1 cup dried apricots (or other dried fruit such as cherries, cranberries, or dehydrated apples)

Instructions

  1. Wrap the baking dish in parchment paper or wax paper and let it aside for 8 to 9 hours. The almonds should be chopped finely in a food processor, but not too finely (stop before they start turning into nut butter). Place them in a mixing dish
  2. To make the apricot paste, crush the pitted dates, dried apricots, and sea salt together until the dried fruits are a paste. In the processor, they may attempt to ball up
  3. In this case, you will need to stop and break up the mixture with a spoon before continuing
  4. Break up the fruit combination and put it to the food processor along with the nuts. Process until all of the chopped nuts are equally distributed throughout the fruit mixture. Transfer the mixture to the baking dish and push it down into an equal layer with your hands, if necessary. Set aside for at least 30 minutes in the freezer, then cut the fruit-nut mixture into squares or bars (I cut mine into 16 pieces)
  5. Set aside for at least 30 minutes in the freezer
  6. Individual portions should be wrapped securely around each bar (see notes). These bars should be good for a couple of weeks at room temperature, but storing them in the refrigerator or freezer can extend their shelf life even more.

My parchment paper wrappers didn’t hold together very well, but they looked incredibly adorable when they were wrapped in vividly colored washi tape. The flavor of the handmade chocolate Larabars will be greatly enhanced by toasting the coconut. When you have finished browning the coconut, you may use it right away or keep it in an airtight container until you’re ready to use it again. PRO TIP: Stir the coconut often, since it may burn fast if left unattended for an extended period of time. When the coconut is correctly toasted, it enhances the flavor of the handmade Larabars to an incredible extent.

TIP: If your dates aren’t pitted, you can simply pit them yourself using this method.
