This wonderful vegetarian stuffed acorn squash is roasted and packed with a hearty filling made from whole grain bread, vegetables, and herbs. It is a vegetarian dish that is perfect for fall.

  • ** Ingredients: 1 cup white basmati rice*, 12 teaspoon dried sage, 12 teaspoon kosher salt split, plus additional salt for sprinkling *2 small acorn squash*
  • 1 small yellow onion
  • 2 cloves garlic
  • 2 stalks celery
  • 1 tablespoon olive oil, plus additional for drizzling
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon pepper peppercorns that have been freshly ground
  • (For vegans, use 3 tablespoons unsalted butter (or replace extra-virgin olive oil, coconut oil, or vegan butter for the butter). 3 cupraw pecan bits
  • 34 cupraw pecan pieces If desired, add bits of feta or goat cheese.
  1. Preheat the oven to 450 degrees Fahrenheit. Prepare the rice as follows: In a saucepan, combine the rice with 2 cups water and bring to a boil. Once the water is boiling, cover the pot and decrease the heat to a simmer. Simmer for 15 to 20 minutes, or until the vegetables are soft and the liquid has been completely absorbed. Remove the pan from the heat and let it to steam for 5 minutes with the lid on. Add the dried sage and 14 teaspoon kosher salt and mix well. Squash should be roasted in the following ways: Meanwhile, cut each acorn squash in half lengthwise and then into quarters lengthwise. To get a more traditional look, you may leave it in half as well. Scrape the seeds out of the jar using a spoon. A baking sheet with parchment paper should be prepared first, then the squash should be placed on the sheet and drizzled with olive oil on both sliced sides, followed with kosher salt and pepper. Roast until the vegetables are soft, about 40 minutes, with the cut side down on the sheet. Meanwhile, prepare the vegetables for the filling by chopping them as follows: Prepare the onion and celery by dicing them. Garlic should be minced. To toast the pecans, do the following: Over low heat, toast the pecans for approximately 3 minutes, stirring periodically, until aromatic
  2. Set aside. Make the filling by combining the following ingredients: In a pan, heat the olive oil over medium heat until shimmering. Cook the onion and celery for 5 to 7 minutes, or until the vegetables are soft and transparent. Stir in the garlic, thyme, and oregano, and cook for another 2 minutes, or until the herbs are aromatic. When the rice is done cooking, add it to the skillet and mix well. Add 14 teaspoon kosher salt, the freshly ground black pepper, the butter, and the nuts and mix well. Serve: Distribute the filling evenly over the squash quarters and serve right away.
