Nora Pouillon, an Austrian-born chef who immigrated to the United States in the late 1960s, was taken aback by what she discovered about American cuisine. “America was a gastronomic wasteland,” says Restaurant Nora’s award-winning chef and owner, who founded the nation’s first certified organic restaurant in Washington, D.C. Pouillon was perplexed by the popularity of goods such as Wonder Bread and iceberg lettuce, and she set out on a quest to introduce more nutritious foods into the American diet.

About the Author

Nora Pouillon was born in Vienna and immigrated to the United States in the late 1960s, where she currently resides. Throughout response to the highly processed, preservative-laden foods that Americans were consuming, she started on a mission to encourage better living. She established an enormous network of organic and natural farmers in Virginia, West Virginia, Pennsylvania, and the surrounding areas of the country. When she and her business partners, brothers Thomas and Steven Damato, launched Restaurant Nora in 1979, they relied on local farmers to supply them with seasonal organic ingredients.

Nora is also the founder of FRESHFARM Markets, Washington, D.C.’s first producer-only farmers’ market, and she has received multiple honors, including the inaugural Genesis Award from the International Association of Women Chefs and Restaurateurs.

Understanding theorigin of the products that we use is one of the besttools we have for guaranteeing the quality that we seek.With a new food-borne illness outbreak in the news seeminglyeach month, it’s become even more important thatwe know how our food is produced, and that we can passthat knowledge on to our customers. Recently, I’vebeen asked by many of our guests atBar Pilar andCafé Saint-Exwhy it is that we do not source strictlyorganic produce to use on our menus. This always begetsa lengthy discussion of the politics and circumstancethat rest at the heart of why we do what we do. I tellthem that the organic label is a useful tool: it ensuresthat a product is of an origin that has less negativeenvironmental impact than conventional farming. Butorganic often falls short of addressing many of theissues most prevalent in the American food market. Organic:The Organic Movement gained attention in the past fewdecades as a critique of – and an alternativeto – government funded farm policies that movedproduction from small family farms into massive factory-likeproduction farms. The organic label, finally regulatedin 2002, was intended to carry with it the ideologiesof the small farmer and what they contribute to ourcommunities. But organic has increasingly become thedomain of large business that seeks to gain from theprofits and markups that the organic label commands.And the ideologies behind the movement have largelybecome lost in the assimilation of a niche market intogiant agribusiness. Where organic haslost traction is precisely where the term sustainablehas ascended. Since its legal definition, organic hascome to represent a recipe for the growth of produce,livestock, and dairy. It is a set of regulations thatgo to great lengths to define exactly what a farmeris not permitted to do in their fields. Absent fromorganic regulations is any concern of how the food fitsinto the larger context of the health of the world thatit is meant to nourish. If organic is what a farmercannot do, then sustainable represents what a farmershould do. Organic is not necessarily sustainable, andsustainable is not always organic. Herein lies one ofthe major gaps in sustainable agriculture. Sustainable:The sustainable food ethic is concerned with every stepof the chain involved in bringing food to the plate.The manner in which the product was grown, how far ithad to travel, its nutritive value, even its marketabilityall in turn take precedence. Farms are businesses andtherefore it must be taken into account whether or notthe product is good for the farm. These are the remnantsof organic philosophy that have evolved to be thoseof the new sustainable thinking. Many of the farmerswhose products we use are not certified organic. Someclaim to be ‘beyond organic,’ and otherseschew the word entirely and focus on marketing thevalue of a product that holds true to the sustainableintent. There is no meaningful research that provesthat organic food is more healthful than its conventionalcounterpart. So what then is the draw of organic? Itcertainly has an implied value that customers are willingto pay extra for, and even expect, in grocery storesand top-notch restaurants. But with all of the choicesavailable to a chef, I feel that it’s time toshift the economic and cultural focus beyond organic,to the promotion of farmers and ranchers that are producingproducts that advance a greater ethos. So how can a restauranteffectively convey the value of these products to itsguests? Flavor is the first and easiest way. Chefs hada huge role in the ascendance of organics by promotingthe taste and educating their customers on the connectionbetween the two. Food that is local and well cared forhas a definite appeal on the plate. This concept isnothing new; our task now is to convince the consumerthat it is not just the lack of chemicals in food thatmakes it great, but the quality and integrity inherentin its sourcing. Challenges:AtSaint-ExandBar PilarI am dedicatedto supporting a small number of farmers whose productsI know that I can trust. Just as I rely on these farmers,they rely on our restaurants to continue buying throughoutthe season, even when offerings are few. When it’sthe middle of January and I have to make turnips interestingfor another two months – this is where dedicationreally comes in! It is a challenge, it can be trying,but it is an integral part of the ethos (and lucky forme, my customers have come to expect that our wintermenus are leaner and simpler). And of course, not everythingthat we source can be purchased locally. I buy citrusfrom a co-op in Florida, and DC is certainly not knownfor its olive oil. It’s often necessary to sourceproduct from places beyond our region – this isone of the concessions needed to keep our business healthy.It’s in the dedication to minimizing these purchasesthat commitment is shown. It is a humbling task to writea menu based on what’s available, and the creativeprocess becomes very elementary as the options decrease.It’s important that my guests know that we striveto support sustainable sources whenever possible, andwhen not possible we seek the most responsible alternative.Rewards: Those are some of the challenges…but now for thebenefits! Sustainable farms are more resistant to theinconsistencies of nature, they provide a more diversediet, and contribute to the quality of the soil. Theyoperate in a manner that ensures production for notonly this generation but for all successive generations.The farmers that I deal with are within 150 miles ofour restaurants and have many clients in the area; thismeans deliveries travel short distances on tightly packedtrucks making the most of the fuel used. The productis picked when ordered and arrives within a day, reducingnutrient loss making it more healthful and more flavorfulfor my guests. Because we deal directly with the farmers,there is no profit lost to middlemen, meaning the farmerand the community see more of every food dollar spent.This is reflected in the overall cost of the food, whichin the end is cheaper than commodity goods. The foodI serve is also the food that is eaten by the farmers.It represents a diverse and healthy diet that a familycan actually live off, and it’s a good rule ofthumb that if the farmer will feed their products totheir own family, I will serve it to my guests. Whethernew to the business or born into it, all my producersbelieve, as I do, that small, sustainable farms formthe backbone of a healthy society. TheConsumers:In a dream world, all of my guests would careabout these issues, but they don’t, and some arenot even aware that the food they eat here is of a commendableorigin. I don’t go out of my way to pile informationinto my menus, but just tell them that by supportingCafé Saint-Ex, they support local familyfarms. I feel it’s important to recognize thatit’s the guests who ultimately support the farms.While I feel strongly that it’s the civic dutyof my restaurant to provide a product that is nourishingto the community, we cannot force the consumer to believein what we do, we can only appreciate those who do.Consumers have showna great interest in eating food that they feel to beto be consistent with their political views. The successof Whole Foods and local farmers markets prove thatwe are choosing to eat responsibly in our homes, andare beginning to demand the same of restaurants. I amthrilled to see more and more restaurants in Washingtonand other cities offering products that show a greaterconcern for the environment. As chefs, we must be proactivein both promoting and embracing this change. Every actionof support can result in change, and each restaurantcan contribute in different ways. How It Works: Choose Your Plan, Pick Your Meals

The procedure of becoming a member of Green Chef is straightforward. Most importantly, learn about each meal plan—Balanced Living, Keto + Paleo, and Plant Powered—to choose which one is best for you. Because meals from multiple meal plans cannot be combined, this is the most critical step. If you do not wish to follow a Keto + Paleo diet, make sure you choose an alternative option from the list at the top of the page. (For our first order, we made the error of signing up for the Keto + Paleo diet by mistake.) Following your selection of a meal type, you will be invited to pick a number of meals (three or four each week) as well as the number of servings per meal (two, four, or six).

You will be asked to pick a delivery day of the week from Monday through Wednesday, Thursday through Friday, and Saturday, and then, based on the day you choose, you will be given the option of choosing between two delivery dates during the following two to three weeks.

What We Made

  • Bistro mushroom chicken with sautéed greens, Swiss cheese, a creamy pan sauce, and toasted almonds is a comforting dish for any occasion. Stuffed peppers with Italian meat, green beans, and almonds in a light sauce
  • With sautéed cauliflower, bell pepper, feta cheese, and almonds, a lemon-basil-caper sauce is served with the pork. The chicken is pan-roasted with a spicy pan sauce, sauteed cabbage, and cumin seeds
  • The vegetables are sauteed cabbage and cumin seeds
  • Thai vegetarian peanut curry with coconut-lime rice, bell pepper, edamame, spinach, and snap peas
  • Thai veggie peanut curry with coconut-lime rice

Support Materials: Recipe Cards and Exclusive Coupons

Each package contains comprehensive recipe cards that are printed on both the front and back. The cards include a brief description of the dish, cooking time, calories, and allergens, a list of the ingredients in the meal kit, any additional ingredients or equipment required for the recipe, and detailed, step-by-step prep, cooking, and assembly instructions with photos. The cards are also available in Spanish. Each box also contains a package of coupons and advertisements from various companies, some of which are linked to food and others which are not (e.g., a flyer for Geico insurance).

There was also a voucher card for a free week of Green Chef meals, which could be given to a friend as a thank you.

In addition to paper advertising materials, we received a complimentary carton of plant-based pea milk from a new company in one of the boxes, which was a pleasant surprise and was actually rather excellent.

Packaging: Eco-Friendly

In a cardboard insulated box, the meal kits were all delivered cold and fresh, with recyclable ice packs on top of the freshly prepared proteins. Food is wrapped in brown paper bags, and the materials within those bags are either put in plastic bags or hard, inflexible plastic to prevent them from breaking. Detailed information about each type of packaging that may be included in your box as well as the best way to dispose of it can be found on the website, but customers can rest assured that all packaging (including sauce packets) is made from recyclable, reusable, and/or compostable materials, unless this is not possible for food safety reasons.

The one snag we encountered was that the plastic packaging had instructions on it to remove the stickers before recycling, but we were unable to do so without spending a significant amount of time soaking the bags and scrubbing off the stickers, which we found to be inefficient.

The Cooking Process: Clear and Easy to Follow

All of the meals we made were extremely simple to make, including meals that were fully plant-based as well as meals that included red meat, chicken, or seafood, and all of them were delicious. With helpful pictures and cooking hints, the directions on each meal card were simple to follow and fairly basic. All of the recipes worked well for us with no hassles or queries, and everything turned out exactly as expected in the time frame that was projected, which was normally around 30 minutes in total.

While everyone’s definition of “healthy eating” is different, Green Chef is for you if you like high-quality organic and sustainably produced products, plant-forward, high-fiber cuisine, and heart-healthy fats. This is also a fantastic service for individuals who follow a plant-based, ketogenic, or paleolithic diet.

Green Chef Is Not Good For

Those who are finicky eaters or who like simply cooked meals without herbs and spices will find Green Chef to be a disappointment. Green Chef meals are also not suitable for people who follow low-fat diets or who require a range of dietary alterations, as there is no possibility to customize the meals.

Add-ons: None

The Green Chef is for you if you like high-quality organic and sustainably sourced products, plant-forward cuisine that are high in fiber, and healthy fats. There were no add-ons available at the time our orders were placed.

Customer Service: Professional and Efficient

Customer service is offered through an educational FAQ section on the company’s website, a live person chat feature, and by phone. We contacted customer support to clarify the window for adjustments and to express our dissatisfaction with the spoiled bell peppers; both times, customer care representatives were simple to reach and quite helpful.

We were quickly given a refund for the two meals that had bell peppers, and we declined without even batting an eye.

Making Changes and Canceling: Must Do in Advance

Making changes to your meal selections is simple and may be done online, but you must do it at least one week before your meal is delivered. After submitting your first purchase, you will receive a confirmation email with the deadline included. Cancelling or skipping weeks may be accomplished quickly and easily online or by phone prior to the deadline. Customer service did tell us that if modifications cannot be made online after the deadline, it is always worth phoning customer service to check if there is anything else that can be done over the telephone.

The Competition: Green Chef vs. Sunbasket

Green Chef and Sunbasket are both considered to be excellent food delivery services for consumers who want organic, healthy components in their dishes. The Sunbasket organic food delivery service differs from Green Chef in that it uses organic ingredients, mainly organic produce, to make its products. Sunbasket and Blue Apron both provide paleo and vegetarian meal plans, but Sunbasket has a total of ten distinct meal plans that cater to a wide range of specific diets. The recipes in meal plans may also be combined and matched to create a custom dinner.

  • Sunbasket also provides a Family Menu that is reasonably priced and meant to be used with leftovers.
  • Both organizations place a strong emphasis on transparent sourcing, sustainability, and nutrient-dense food, and they both provide recipes from a number of different world cuisines on their websites.
  • Sunbasket offers more possibilities for people who want a meal delivery service on a regular basis and who have larger families, as well as for those who have more meal occasions or varied dietary requirements.
