Ingredients

  • 4 herbs: 1 sage leaf, 12thyme sprig, 1 cumin seed, 12 dried rosemary leaf, 200 ml water, 3 black peppercorns, 2 fennel seeds, 2mint leaves, ice, 3 coriander seeds, 14 lemon slice

Step 1

To softly break the spices, use a mortar and pestle to do so.

Step 2

Place all of the herbs on a chopping board and set aside. Flavor will be released if you lightly smash them with the dull edge of a knife.

Step 3

Combine the herbs, spices, and lemon in a jar with the water and lots of ice. Seal the container and set it aside. Shake the container vigorously until it sweats and feels very cold.

Step 4

Wait for the liquid to drop through a sieve lined with paper towel set over a bowl before pouring again. Pour into a glass filled with new ice and serve immediately.

The method:

Preparing the fruit or herbs you will be utilizing begins with washing them. According to your preference, you may wish to chop the fruit or vegetable into pieces (e.g. if using apple, kiwi, cucumber). Add your flavorings to the jug or bottle next – either one type of fruit, one type of herb or spice, or a combination of them. Feel free to play with with the combinations and the amount of each ingredient you use. You may start with a few slices or a few berries and then add more if you want to make the flavor more intense, or vice versa.

  1. Add in the ice cubes and stir well (optional).
  2. If you’re using a bottle, give it a little shake after you’ve closed it to enable the “juice” from the mixed fruit and spices to combine with the water.
  3. Voila!
